Dandelion Jelly. Have you ever heard of it? I just found out about this stuff about a year ago, and man is it good! You literally make it from dandelions!! Who knew it existed! 

How do you make itโ€ฆ first by heading out and grabbing dandelions! However, make sure you are not grabbing them just anywhere. You want to be mindful of places that might be contaminated with chemicals or sprays. It’s always best to avoid roadsides, as these areas are often heavily sprayed.

I’m lucky enough to always have enough growing in my own yard this time of year to not have to worry about going anywhere else. If you live in a more urban area and don’t have your own yard to grab them from, just make sure you know whether or not the area you are picking from is contaminant-free.

Once you have your basket full of dandelion itโ€™s now time to sing the old song, โ€œMomma had a baby and her popped offโ€โ€ฆ you gotta be old to know this one, haha! In other words, itโ€™s time to  pluck off the dandelion flower heads. 

You will need about 2 cups of petals for this recipe, so make sure you grab extrasย since all the green parts will be removed and discarded.

One of the easiest ways to remove the flower head is to cut it off with a sharp pair of scissors. I do it the old fashioned way and just use a sharp knife. Perfectly acceptable both ways!

Now come the most time consuming and patient part of the process. Itโ€™s not hard, just takes patience. Make a strong infusion with the prepared flower petals, just the yellow part. Remember, you removed all the green! Place two cups of dandelion flowers (as much green removed as possible) in a quart-sized mason jar or glass bowl and pour 4 cups of boiling water over them. Put the lid on the jar and leave it to cool and the flowers to infuse for 24 hours. You can also just cover the bowl.ย 

After the 24 hour infusion process, it’s time to strain the flowers out. You can use a fine-mesh strainer held over a large pot to pour the liquid through. Or, I like to use a cheesecloth. I feel it strains much better! Be sure to squeeze as much liquid out as you can. You don’t want to lose any of that wonderful liquid that will become your sunshine in a jar!

Having fun yet? I seriously find this so exciting!! Now itโ€™s time to add To theย  2 Tbsp of fresh lemon juice and 1 package of powdered pectin. Mix thoroughly together and bring to a boil. Add 4 cups of sugar and return to a boil and continue stirring. Boil for another 1-2 minutes.

Pour your boiled mixture into clean and sterilized jars. Wipe the jar rims to remove any liquid that might have gotten on them and screw clean lids and rings on tightly. You have now made Sunshine in a jar!!ย 

If you plan on using them right away, you can stop here. Once cooled, the jelly is finished! If youโ€™d like to wait, keep reading! 

To can using the water bath canning method, here are the basic steps:

  • Fill a boiling-water canner (or large, deep Dutch oven fitted with a round, metal cooling rack) about half full with water.
  •   Bring to a full simmer.
  •   Lower the filled jars into the
    simmering water one at a time
    with a jar lifter or use a canning
    rack to lower all the jars into the
    water at once. Put the lid on the
    pot and set a timer for recipe
    directions.
  • After time is up, lift rack up out of the water.
  • Note: If your jars sealed properly, you should start to hear the beautiful little sounds of popping the boiling water. Wait a few minutes then test by pressing down on the center of the jar lids. If they can’t be pressed down, then you have done it! They have likely sealed properly.

๐–๐ก๐š๐ญ ๐ฒ๐จ๐ฎ ๐ง๐ž๐ž๐:

  • 2 cups Dandelion flowers sepals & calvx removed
  •   4 cups Boiled Water
  •   1 Package powdered pectin
  •   2 Tbsp. Fresh lemon juice
  •   4 cups Sugar

๐–๐ก๐š๐ญ ๐ญ๐จ ๐๐จ:

  1. Pluck dandelion flower heads.
    You will need about two cups of petals for this recipe, so gather extra since all the green parts will be removed and discarded.
  2.   Cut off the the green parts at the base of each flower head with a sharp pair of scissors or knife
  3.   Place two cups of dandelion flowers as much green removed as possible) in a quart-sized mason jar and pour 4 cups of boiling water over them.
  4.   Put the lid on the jar and leave it to cool and the flowers to infuse for 24 hours.
  5.   After 24 hours strain the flowers out. Use a fine-mesh strainer (or cheesecloth) held over a large pot to pour the liquid through.
    Squeeze as much liquid out as you can.

6 You should have close to four cups of liquid.

7.   Add 2 Tbsp of lemon juice and one package of powdered pectir to your liquid and bring to a boil.

8.   Add 4 cups of sugar and return to a boil and continue stirring.
Boil for another 1-2 minutes.

9.   Pour your boiled mixture into clean and sterilized jars. Wipe the jar rims to remove any liquio that might have gotten on them and screw clean lids and rings on tightly.

10.ย  ย  Process in water bath canner for
10 minutes.
