𝐖𝐚𝐫𝐦 𝐀𝐧𝐝 𝐂𝐨𝐳𝐲 🍂

It’s that time of year where you want to use the crock pot, but you are tired of the same old chilis and soups. I came up with the easiest and most delicious Butternut Squash Soup that tastes remarkably like one of those popular Bistro coffee and sandwich shops. This tasty dish will have you putting on your flannel PJ’s and cozy slippers and cuddling up by the fire with your favorite movie! 🫕

Oh, and did I mention it is super easy to make!! 

𝐁𝐮𝐭𝐭𝐞𝐫𝐧𝐮𝐭 𝐒𝐪𝐮𝐚𝐬𝐡 𝐒𝐨𝐮𝐩

𝑾𝒉𝒂𝒕 𝒀𝒐𝒖 𝑵𝒆𝒆𝒅:

1 Large Butternut Squash cubbed. (You can even sometimes find these pre-cut at the grocery store)

1/2 Cup Apple Juice

2 Tsp Veg Oil

2 Tsp Crushed Garlic (You can cut corners and buy minced garlic!)

1 Tbsp Cinnamon

1/2 Cup Pumpkin

1 Tblsp Onion Powder 

2 Tblsp Brown Sugar 

1 Cup Veg Broth

1/2 Cup Cream

Salt & Pepper to Taste

𝑾𝒉𝒂𝒕 𝑻𝒐 𝑫𝒐:

Combine everything but the cream in the Crock Pot or Insta-Pot. Cook 4/6 hours in the slow cooker or 2 hours in the Insta-Pot.

Once cooked, add cream and stir. Then add to a food processor and pulse until nice and creamy. Garnish with your favorite greens and enjoy!
